Ingredients:

  • For the Beef:

    • (500g) Lean beef mince
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 packet taco seasoning (or homemade mix)
    • 1/4 cup water
    • 1 tbsp olive oil
  • For the Rice:

    • 1 cup uncooked brown or white rice
    • 2 cups water or chicken broth
    • 1/2 tsp salt
  • Toppings:

    • 1 can black beans, drained and rinsed
    • 1 cup corn kernels (fresh, frozen, or canned)
    • 1 cup shredded lettuce
    • 1 cup diced tomatoes
    • 1/2 cup shredded cheddar or Mexican blend cheese
    • 1/4 cup sour cream or Greek yogurt
    • 1/4 cup guacamole
    • Fresh cilantro, chopped
    • Lime wedges

Method:

  1. Cook the Rice:

    • Rinse the rice under cold water to remove excess starch. In a medium saucepan, combine the rice, water (or broth), and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes (for white rice) or 35-40 minutes (for brown rice) until all liquid is absorbed and the rice is tender. Fluff with a fork and set aside.
  2. Prepare the Beef:

    • In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for another minute until fragrant.
    • Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Continue cooking until the beef is browned and fully cooked through, about 6-8 minutes. Drain any excess fat if necessary.
    • Sprinkle the taco seasoning over the beef, then add 1/4 cup of water. Stir well to combine, letting it simmer for about 2-3 minutes until the sauce thickens. Remove from heat.
  3. Assemble the Burrito Bowls:

    • Start by spooning a serving of cooked rice into the bottom of each bowl.
    • Top the rice with a generous scoop of the seasoned ground beef.
    • Add your desired toppings: black beans, corn, shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, and guacamole.
    • Garnish with fresh cilantro and a squeeze of lime juice.
