Ingredients:

For the Beef:
- (500g) Lean beef mince
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade mix)
- 1/4 cup water
- 1 tbsp olive oil

- 1 cup uncooked brown or white rice
- 2 cups water or chicken broth
- 1/2 tsp salt

Toppings:
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup guacamole
- Fresh cilantro, chopped
- Lime wedges

Cook the Rice:
- Rinse the rice under cold water to remove excess starch. In a medium saucepan, combine the rice, water (or broth), and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes (for white rice) or 35-40 minutes (for brown rice) until all liquid is absorbed and the rice is tender. Fluff with a fork and set aside.

Prepare the Beef:
- In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Continue cooking until the beef is browned and fully cooked through, about 6-8 minutes. Drain any excess fat if necessary.
- Sprinkle the taco seasoning over the beef, then add 1/4 cup of water. Stir well to combine, letting it simmer for about 2-3 minutes until the sauce thickens. Remove from heat.

- Start by spooning a serving of cooked rice into the bottom of each bowl.
- Top the rice with a generous scoop of the seasoned ground beef.
